Cooking without (or with fewer) EGGS!
- Eliminate the yolk whenever you think you can! You still get the protein, none of the fat and cholesterol!
- Use 1 whole egg plus 1 egg white to make one big fried egg.
- Use 1 whole egg plus 2 egg whites for enough scrambled eggs to feed 2 people as part of a healthy breakfast.
- Use no egg at all or white only in meat dishes, such as meatloaf and meatballs, that call for an egg.
- Sprinkle ground, milled flax seed in meat dishes in place of egg and oil; this adds the consistancy (to act as a cohesive agent) as well as the moisture. It also adds Omega 3s and more fiber!
